The vineyard
SALKIM sits on a south-facing Aegean slope where old bush vines root in red clay. Mornings smell of thyme; by afternoon the light turns to warm oil over the rows. We farm by hand, guided more by the calendar of the hill than by the market.
We don't bottle a vintage. We host a season.
Every visit is shaped by what is ripe that week. That is the whole idea: the vineyard is a clock, and the table simply tells the time. Come in spring for green almonds and crisp whites; come at harvest for grilled lamb and the first red drawn from the barrel.
We farm by hand and let the hill keep time.

Reservation is required. Every experience is guided and cooked to a set number of guests, so we cannot take walk-ins.
Yes. A full vegetarian season table is always available, and most dishes can be made vegan with notice. Tell us about allergies when you book.
We are a short drive from the coast road; full directions and a map are sent with your confirmation. Free parking is on site, and we can arrange a taxi so everyone tastes freely.
Free cancellation up to 72 hours before your visit. Within 72 hours we hold the deposit, but we will always try to move your booking to another date first.
The season table seats up to fourteen. For larger groups, celebrations or company days we open the whole terrace privately — write to us and we will build the day around you.
Children are welcome at the Vineyard Walk and Harvest Table, with a simple menu and grape juice pressed on the hill. The seated Cellar Tasting is designed for guests of legal drinking age.
